Chanfaina de borrego (cooked beef entrails), Salpicón de Res (cooked and chopped beef meat with lemon, onion and parsley), Marinated pork meat, Pork meat sausages (chorizo, longaniza y butifarra), Pork ribes with green and red chilli sauce, Tortillas with asiento (fat derived from the pork), Chinculguajes (tortilla filled with beans and herbs), Quesillo (a kind of cheese), Cream and regional cheese, Chicharrón de panza, mondongo, Tamales, Panes compuestos, among others.
   
Drinks Temperante (red sweet beverage), Comiteco (strong liquor from Comitan), Mistela (soft liquor drink made with alcohol and regional fruits) Tzilacallote (made with a special regional fruit), Atole de granillo (a hot drink made with corn) and Jocuatol (hot drink made with fermented corn).
